Do you have a local kennel club? Many of them can refer you to members who offer obedience training, or refer you to a training club.
Higher levels of obedience teach scent discrimination. And many training clubs will have at least one member who participates in tracking trials. Or they can refer you to a tracking club.

Well, I am a firm believer in encouraging natural behaviors (functionlust) in dogs. Allowing them to do what comes natural for them is alot easier to train than a skill that is un-natural. Thus, your lab would probably be GREAT in retrieving work! There are some great trials for labs and most of them include water YIPEEEEEE!
