First off, your best bet is to get her groomed regularly at a place that you trust. By regularly I mean no more than 2-3 wks between groomings if you want her to be in a continental, and since she's probably going through her coat change now too, I'd even say once a week until it gets to be more manageable.
When you dematt the hair, it makes it more susceptible to matting again cause the hair is damaged and will knot up faster. Poodles going through their coat change will matt within one day, so it's probably a good idea to find a reputable breeder in the area who can help you one on one with how to care for a poodle's long coat. You can also ask your groomer when you find one you like.
Does she play with other dogs or with you a lot? That will cause her to matt cause when they're wrestling, or rolling around on the carpet, or being "roughed up" with you during play, it tends to get tangled which leads to matting.
If you're doing grooming at home, I would say it's more important to get a high quality dryer specifically for grooming than to get a leave in conditioner. Conditioners and detangling solutions help, but being able to "blow" those matts apart and get down to the skin bone dry will save you a LOT of trouble. Hope this helps! Have fun with your pup.
